Meal Planning for Pregnancy: Weeks 7 & 8

Okay, so food is becoming a challenge. Not because of the commitment to use the book or really even the commitment to eat vegetarian, but because nothing sounds good. Hence the carry-overs and second-tries from last week’s meal plan. Actually, I take that back. What does sound good? Boxed mac n cheese. I ate so much of that stuff in my other two pregnancies.

Also, we are going to be gone a lot over the next month or so. That’s tough. What do you do when you are feeling puny and are staying 3 hours from home? What do you do when you aren’t the one cooking (besides nap…frequently)? We’ll see. This weekend is our first big weekend out. I’m taking the Vita-Mix, collard greens and some frozen fruit for some smoothie backups. With today’s gag fest, maybe I should take the peppermint tea leaves I just bought, too…

Meal Plan for Weeks 7 & 8

Monday: Scrambled Eggs Plus & Fried Potatoes
Smoothies
Beans & Rice (or leftovers)

Tuesday: Whole Grain Pancakes
Salad
Stuffed Bell Peppers

Wednesday: Peanut Butter Snack
Bean Salad
Potluck (Chocolate Tofu Pie!)

Thursday: Leftover Oatmeal-Raisin Muffins
Smoothies
Chili

Friday: Whole Grain Pancakes
Baked Potatoes
Fajitas

Saturday: Millet Crunch Granola
Black Bean & Corn Soup

Sunday: Smoothies
Leftovers.

Monday: Scrambled Eggs Plus & Fried Potatoes
Garbanzo Salad
Black Bean Burgers & Millet Mashies

Tuesday: Cream of Millet Cereal
Salad
Miso-Noodle Soup

Wednesday: Muffins
Smoothies
Potluck ( Mashed Potatoes ?)

Thursday: Scrambled Eggs Plus & Fried Potatoes
Salad
Grocery shopping night!

Friday: Molasses Toast
Smoothies
Tacos

Saturday: Sesame French Toast
Pumpkin Seed Pesto Ravioli

Snacks: Toasted Nut & Seed Mix
Popcorn Snack Mix
Fruit!
Deviled Eggs
Peanut Butter Snack

Drinks: Teas!
Water, Water, Water
Chia Energy Drink

Goals: Stay Hydrated
Prep at least one meal a day in advance
Find new ways to eat salad!
Learn to love millet

    Mmmmm ~ I will so be there for chocolate pie on Wednesday! :-) I actually need to learn how to make it ~ for those days when I just have to have chocolate…. or for one of those days when YOU just have to have chocolate and do not have the energy to make it!!
