
I’m digging this curry thing. I don’t know where these spices have been all my life. This one has curry spices mixed up in a dressing and poured over rice. It is supposed to have raisins and cilantro, too, but I’ll have to come back to this to tell you how that goes. Seems like there’s always something missing.
Even without the missing ingredients, this was fabulous. The flavors are sweet and savory at the same time, and something about it is almost addictive. According to the cookbook, you can keep it for a week in the fridge. Judging by how tonight went, it might last another day.
We stuffed bell peppers with it this time. I’m thinking it’d be great with some gooey garlic bread, crackers, shredded veggies in a veggie wrap…Yeah, this will work.
Nutritional highlights: A good shot of grains here will get you fiber and B vitamins and minerals. A whole foods snack on hand will get you out of the cookie jar. Win/win!
