Pregnancy- Vegan Dinner p.151: Ginger-Lentil Soup

Ginger Lentil SoupWhen I first made the Lentil Steaks, Hubby was impressed that he liked it. After all, it was made of lentils. “Well,” he told me, “as long as they aren’t in soup, I think I can do them. Lentil soup is GROSS.”

Yet there…in the pages of my beloved cookbook…was a lentil soup.

I’ve stalled.

Finally, with another iron stick coming up, it was time. We had to have lentil soup. Well, at least we were planning on eating out one night this week. If it was a total flop, we could always switch nights…

But then, that smell…oh, in a very good way…it filled the house, and the first thing he said when he walked in the door is, “Ooh, that smells good. Smells like bouillon.” GAG. No, no nasty bouillon cubes here. Just an incredibly flavorful smell.

We sat down to eat, and we were all surprised. Iz was surprised that he preferred the carrots over the lentils (oh, texture issues, won’t you go away?); Fuz was surprised that he actually COULD eat 5 big bites when it meant we were going to the park afterward; Hubby was surprised that he not only didn’t hate the soup, he actually liked it; I was surprised that I’d gotten dinner done so early…and still had forgotten 2 ingredients. Really?!

The broth is fantastic. I think I’m sold on miso in soup broth. It’s pretty much fantastic.  I already said that. Well, I liked it, anyway.

It did make me crave garlic bread pretty badly, but I had nothing to make it. So, after dinner (and the bike ride that followed- yes, I am insane. And a rock star.), I snuck off to the store to get some garlic bread (and some Earth Balance margarine to make these stupid pot pies…and maybe some oreos…), came home and added the rest of the ingredients to the soup. It’s happily combining flavors in the fridge now, and I’ve got about an hour before I can dig in with goopy garlic bread. Fly, time, fly!
